Sunburn & a Sweet Tooth! :)

I've been away for a few days gathering my thoughts in the big ocean sunbathing in the sea breeze. Okay, actually I have been swimming in my dad's back yard pool wearing a bathing suit way to tight for a post-partum (mom of an almost 4 month old) body. Also, it is well noted that a red head from the south really shouldn't be in the sunlight with out sunscreen. It's been four days and my skin is still boiling.

On a different note, in the few days I've been home from my oceanic oasis... I've been doing the whole 'house wife" thing.. I mean really, who knew I could actually cook. My husband isn't complaining... I really just have to watch out for the scale... it may not be happy with me. ha.

 I've also cooked some delicious pork loin and more than amazing peanut butter cupcakes! nomnomage!!(see deets below)

 First I started by melting a jar of peanut butter in a sauce pan on medium. I just let it melt until it was smooth, not runny. Next I added the contents on the back of the Funfetti cake mix! (My FAVE!)... I also stirred in the peanut butter. This made the cake mix extra gooey, so to smooth it out some I added 1/3 cup of Coca-Cola. (As you can tell, I've downed most of the bottle.. blame my grandmother.. it's in my blood.) After the Cola was added,  I stuffed the mix into a heart shaped pan and poured another 1/3 cup of Cola on top of the cake and set to bake at 350 for 20 minutes.

(When you remove the cake after 20 minutes it will still be extremely doughy.) I then took the gooey cake mix and dumped it into a bowl and remixed it up.. (I also added Funfetti sprinkles to the batch just for fun.) Next I placed the cupcakes into a muffin pan (this is where my camera died, so no picture of the cupcake pan.) I packed the mix into each muffin section.


Then I jacked the oven temp up to 430 degrees and let the muffins cook for another 10 minutes. I took them out to cool for another 10. (Mine were actually still a bit dough like, but that's how I prefer them.. I'm sure cooking them longer will add a more cake like effect).

I had planned on putting icing and crushed nutter butter wafers on the cupcakes, but since my darling husband doesn't like icing.. I'm leaving it off of this batch.

This is a little extra work to cooking peanut butter cupcakes, but seriously they are delicious!! So worth it... and perfect with a tall glass of milk! :)..(also made a few peanut butter cake balls rolled in crushed nutter butters)

Call me Crazy....

.... but, I am already planning Tyler's first Halloween party. I've loaded up on oodles of decor from the dollar store (which actually looks pretty awesome) and lots of Modpodge to create my own pretties. Those I will show off closer to Halloween.. I guess you could say I like Halloween in July vs. Christmas. I could spend months planning for Halloween.. and you betcha, I will.

I have been super busy creating other artwork for my home, including these two amazing photos. (Okay, so maybe they are a bit amateur, but I'm diggin' them)

I took two plain 5x7 wooden planks from Wal-mart (99 cents each) and chose two 4X6 pictures that I took for my photography site! I Modpodged the pictures to the planks and added a musical note shreds to one frame and confetti from the dollar store to the other.  I am in love with these pictures and the sweet face in them!! I also created a few others.. but can't show them off until later because they are gifts! I'm sure they will love them.

I will be spending the rest of my night cleaning house since I spent most of my day being lazy with my darling baby boy.

Hello & welcome to my insane world!

Howdy Y'all.. at least that's how we say hello in the south. Don't hate! ... I have decided with my bouncing bundle of baby boy joy growing bigger by the minute that I could at least create a blog about how amazing my life is.

A little about me!

My name is Kari and I am in love with an amazing man named Matthew! God, Matthew, and our youngin' are my everything. God blessed me with an amazing husband. We met at Jr. College in his hometown but we weren't actually "meant" to be together..yet I had different plans. A friend of mine from high school was about to get engaged and another friend of my mine (also from high school) liked the first said friend. (we will call them friend A and B).. Friend A invited me on a "double date" to see if maybe friend B would take interest in another guy instead of himself..Friend B didn't like the other guy so I ended up taking over that role and married Friend C! :) This was one of the BEST decisions of my life.

We dated for a little over a year and got engaged in 2009 and were married June 4th 2011. :)

I have deemed myself a professional student simply because I can't seem to finish the one semester I have lacking in my teaching degree. Something always comes up.. last semester... I had a baby!! ha.

Our baby "Tyler" was born April 9th 2012 and was a healthy 7lbs 14oz. He is pretty much our world and his smile makes everything worthwhile.

With getting married and having the cutest baby ever..  I am taking some time to figure out things about myself and my family. I really enjoy being a stay at home mom. Everything my little boy does amazes me.. yet there is a little part of me that longs for a degree.. yet I am not sure it's in teaching. I am pretty sure I will major in business (online classes) in the spring and I will def. continue with my hobby/side job of photography.

I'm not always sure where life is taking me, but I do know that life is wonderful and I can't wait to see what it has to offer.

Hope you will continue to read my blogs... I promise to be more interesting than telling about myself.
